Tangy Pork Chops (crock pot)

I found this recipe in a Taste of Home magazine several years ago. I love it. It's sort of a sweet and sour taste.

Tangy Pork Chops


4-6 boneless pork loin chops, 1/2” thick
1/2 t. salt
1/8 t. pepper
2 medium onions, chopped
2 celery ribs, chopped
1 large green pepper, sliced
1 can (14.5 oz.) stewed or chopped tomatoes
1/2 c. ketchup
2 T. cider vinegar
2 T. brown sugar
2 T. Worcestershire sauce
1 T. lemon juice 1 beef bouillon cube

Place chops in crock pot. Sprinkle with salt and pepper. Add onions, celery, green pepper, and tomatoes. Combine ketchup, vinegar, sugar, Worcestershire sauce, lemon juice, and bouillon; pour over veggies. Cover and cook on low for 5-6 hours. Mix 2 T. cornstarch and 2 T. water until smooth and stir into sauce in crock pot. Cook on high for 30 minutes or until thickened. Serve over rice.
